Rafflesia

The Rafflesia is a released, single-harvest Legendary crop from the Mega Harvest update, and unlike the event-locked plants around it, this one is actually obtainable, which immediately makes it more relevant to your day-to-day farming economy. Being a real, in-game Legendary means you can plan around acquiring and growing it rather than treating it as a museum piece.

The catch is the single-harvest mechanic. One planting yields one pick, then the plot reopens, so there are no recurring payouts to compound. That pushes its economics toward a burst model: you want maximum value out of that one harvest because you only get it once per seed. With no exact sell price recorded here, lean on its Legendary tier as the signal that the base payout is strong, well above common shop crops.

Given the one-and-done nature, mutations are the whole game on a Rafflesia. Never sell it plain. Wait for a Gold or Rainbow roll, and layer a weather mutation like Wet or Frozen on top before harvesting, since stacking multipliers on a single high-base pick is exactly how you justify the slot it occupies during a Mega Harvest grind.
