Sovereign Oarfish
“The Sovereign Oarfish is an elegant and extremely rare fish found within the Enchanted Crevice. Its long pale body and glowing crest seem to pulse with the same power leaking from the Statue of Sovereignty, making it one of the clearest signs that the altar has truly awakened.”— in-game Bestiary description

Sovereign Oarfish guide
Sovereign Oarfish is the Mythical catch of Enchanted Crevice, and its recipe leans on weather that only shows up in special conditions: Sovereign Surge, Sovereign Storm and Sovereign Reckoning. You also need Truffle Worm bait and Night. The wiki calls it an elegant and extremely rare fish found in the crevice.
The stats are good. Average weight is 45 kg, from 27 kg to 200 kg, and the maximum ranks 248 of 663 fish. At about C$55.26 per kg, the average sale is C$3,869, 204 of 742 documented fish by average value. Base XP is 4,200, which is higher than its price in coins.
No other fish are listed in the zone and no rods are sold there, so the crevice is a one-purpose trip. That helps with planning: you go for the Oarfish and nothing else.
Verdict: worth it if you can line up the weather, but weather is the gate. The Sovereign events are not something you can summon with the data given, so treat the Oarfish as an opportunity catch. Stock Truffle Worm ahead of time, fish at night, and when one of the three weather types arrives in Enchanted Crevice, drop everything and cast.
