Update 6 added the Extinction Egg, a paid egg with six extinct animals. The patch notes say each hatch has a small chance to reroll, and that rerolls give a rare skeletal version of the animal you hatched. The wiki does not publish the reroll odds. It files the skeletal forms, together with several of the base extinct animals, under a Skeletal Egg of ten pets.
That means Skeletal Dunkleosteus is a two-step result: the hatch has to give Dunkleosteus, and then the reroll has to trigger.
