The wiki's pet table files Dunkleosteus with the Skeletal Egg group, alongside the Skeletal variants, without naming the egg for the plain form explicitly. It's obtained outside the biome nests, so Speed and guardians play no part. The wiki gives no grow time, hatch reward or re-roll odds.
